Vegan Spicecake Cupcakes
Preheat oven to 350 and use vegan butter to grease cupcake pans
In a bowl, add dry ingredients:
1 1/2 cup of flour
1 cup of monk fruit "sugar"
1 heaping teaspoon of baking powder
1/2 teaspoon of baking soda
pinch of salt
1 1/2 teaspoons of cinnamon
1/2 teaspoon of cardamon
1/2 teaspoon of nutmeg
1/2 teaspoon of ginger
1/4 teaspoon of allspice
1/4 teaspoon of ground cloves
Stir in the liquid ingredients:
1 cup of vegan milk (cashew or hemp works works well)
1 teaspoon of vinegar
1/4 cup of oil or applesauce
Fold in one finely chopped apple
Bake for 22 minutes or until a toothpick comes out clean
